  • Roasted prime rib with fresh horseradish

    Method

    1. Preheat oven to 350F / 180C.

    2. Season beef with salt and pepper.

    3. Place a large roasting tray over a medium to high heat and seal the beef on all sides and remove from roasting tray.

    4. Place carrot, celery and shallots with the thyme in the bottom of the roasting tray and sit beef on top of vegetables.

    5. Brush beef with mustard.

    6. Place beef in oven for 1 hr 45 mins to 2 hours.

    7. Once beef has been removed from oven, allow it to rest in a cool place for 30 minutes before slicing.

    8. Make sandwiches using beef, tomatoes, arugula and horseradish.

  • ROASTED PRIME RIB WITH FRESH HORSERADISH

    Ingredients

    For the roast beef
    1 x 4 lb / 1.8 - 2 kg standing rib of beef (bone in)
    Salt and pepper, to season
    3 carrots, peeled and roughly cut
    3 celery ribs, roughly cut
    4 shallots cut in quarters lengthways
    ½ bunch of thyme
    2.5 oz / 75 g Dijon mustard
    For the horseradish sauce
    2 tbsp seeded mustard
    4 tbsp of freshly grated horseradish
    1 cup semi-whipped cream
