Preheat oven to 350F / 180C.

Season beef with salt and pepper.

Place a large roasting tray over a medium to high heat and seal the beef on all sides and remove from roasting tray.

Place carrot, celery and shallots with the thyme in the bottom of the roasting tray and sit beef on top of vegetables.

Brush beef with mustard.

Place beef in oven for 1 hr 45 mins to 2 hours.

Once beef has been removed from oven, allow it to rest in a cool place for 30 minutes before slicing.

Make sandwiches using beef, tomatoes, arugula and horseradish.
