  • Fresh Salad of Tuna Sashimi Fennel and Grapefruit

    Method

    1. In a large mixing bowl combine the salad leaves, fennel, and grapefruit segments.

    2. Using a sharp knife slice the tuna into ½ inch slices.

    3. Combine the tuna with the rest of the salad ingredients.

    4. In a separate bowl place the lime, honey and grapefruit juice, whisk ingredients together while slowly adding oil.

    5. Drizzle the dressing over the salad and gently toss.

    6. Divide the salad between 4 serving plates.

    200g fillet of Ahi tuna (sushi grade)
    2 cups of mixed lettuce leaves
    ½ cup thinly sliced fennel
    1 grapefruit (segmented) juice reserved
    2 tablespoons lime juice
    1 tablespoon honey
    6 tablespoons grape seed oil
    Salt and Pepper
