  • Spinach Cherry and Goat Cheese Salad with Cherry Vinaigrette

    Method

    1. For the vinaigrette: using a food processor combine the cherries, brown sugar, cumin, shallot, and Dijon mustard. Start the processor and blend until smooth. Add half the vinegar, then half the oil, alternating pouring the vinegar and the oil until both are finished. Season with salt and pepper.

    2. In a large mixing bowl combine the spinach and ¼ cup of the dressing, mix well and season with salt and pepper.

    3. Transfer to a serving bowl and garnish the top with goat cheese, cherry pedals and pumpkin seeds.

    Ingredients

    150 g goat Cheese, crumbled
    400 g Spinach
    10 each cherries, cut from the seed into pedals
    ¼ cup roasted pumpkin seeds

    For the vinaigrette:

    8 cherries, pit removed
    2 tbsp brown sugar
    1tsp cumin, ground
    1 shallot, finely chopped
    1 tsp Dijon mustard
    1/3 cup olive oil
    ¼ cup red wine vinegar
