  • BBQ zucchini with tomato and white balsamic vinegar

    Method

    1. Slice zucchinis lengthways into 3.

    2. Salt evenly and allow to stand for 20 minutes.

    3. Wash salt off zucchinis and pat dry.

    4. Coat with a drizzle of olive oil and grill on hot grill pan or BBQ until just coloured.

    5. Take zucchinis off grill, allow to cool and slice diagonally into 1 in / 2.5 cm pieces.

    6. In a separate pan, add olive oil, herbs, chilli and garlic and sauté for 30 seconds.

    7. Add zucchinis, toss till warm and then pour in the vinegar and tomatoes.

    8. Add some salt and pepper and serve warm.

    Serves 4 -6

    Ingredients

    6 zucchinis, sliced lengthways into 3
    1 oz / 25 g salt
    2 tomatoes, skinned and cut into slices
    1 clove garlic, chopped
    3 sprigs thyme
    2 bay leaves
    ½ chilli pepper, de-seeded and sliced
    1.7 fl oz / 50 ml extra virgin olive oil
    1 fl oz / 30 ml white balsamic vinegar
